Abstract

Abstract. This study proposes an innovative technological approach for producing marinated products from dried tomatoes by optimizing rehydration, marinade composition, acidification, thermal treatment, and packaging. The proposed formulation combines dried tomato slices, an acidified aqueous solution, vegetable oil, garlic, and selected herbs. Four experimental formulations are proposed to evaluate the effects of vinegar concentration, salt content, and rehydration conditions on product quality. The main evaluation parameters include pH, titratable acidity, moisture content, water activity, color, texture, sensory acceptability, and microbiological stability.
