Abstract

Agricultural product storage and processing play a fundamental role in ensuring food security, reducing post-harvest losses, and enhancing the economic value of agricultural commodities. The increasing global demand for high-quality food products, combined with climate change and population growth, has intensified the need for efficient storage systems and advanced processing technologies. Improper storage conditions often result in significant quantitative and qualitative losses due to microbial contamination, pest infestation, moisture fluctuations, and biochemical deterioration. Modern storage technologies, including controlled atmosphere storage, refrigerated storage, hermetic storage systems, and smart monitoring technologies, have significantly improved product preservation and shelf life. Likewise, innovative processing methods such as drying, freezing, fermentation, pasteurization, vacuum packaging, and non-thermal processing contribute to maintaining nutritional quality, food safety, and market competitiveness. Digital agriculture, artificial intelligence, and Internet of Things (IoT)-based monitoring systems are increasingly integrated into post-harvest management to optimize storage conditions and reduce waste. Sustainable agricultural processing also promotes environmental protection through energy-efficient technologies, waste recycling, and circular economy practices. This article reviews contemporary approaches to agricultural product storage and processing, discusses major challenges affecting post-harvest management, and highlights innovative solutions that support sustainable agricultural development and food security.
